Red Velvet Cupcakes Recipe
Ingredients:
For the Cupcakes:
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 tbsp unsweetened cocoa powder
- 1 large egg, at room temperature
- 1 cup buttermilk, at room temperature
- ½ cup vegetable oil
- 2 tbsp red food coloring
- 1 tsp vanilla extract
- 1 tsp white vinegar
For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
- A pinch of salt
Instructions:
- Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
- Mix dry ingredients: In a medium-sized bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
- Combine wet ingredients: In a large bowl, beat together the egg, buttermilk, oil, food coloring, vanilla extract, and vinegar until well combined.
- Add dry to wet ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
- Fill cupcake liners: Divide the batter evenly among the 12 cupcake liners, filling each about 2/3 full.
- Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
- Make the frosting: In a large bowl, beat the cream cheese and butter together until smooth and fluffy. Gradually add the powdered sugar, one cup at a time, and continue to beat until smooth. Add the vanilla extract and a pinch of salt, and beat until fully incorporated.
- Frost the cupcakes: Once the cupcakes are completely cooled, spread or pipe the cream cheese frosting onto each cupcake.
- Optional decoration: For a Valentine’s Day touch, sprinkle with red or pink heart-shaped sprinkles, or add a few fresh raspberries on top!
Enjoy your delicious and beautiful Red Velvet Cupcakes, just in time for Valentine’s Day!
