Its February. Love is in the air. Here’s a sweet recipe for Red Velvet Cupcakes, perfect for Valentine’s Day! These cupcakes are soft, velvety, and topped with a delicious cream cheese frosting.

Red Velvet Cupcakes Recipe

Ingredients:

For the Cupcakes:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 tbsp unsweetened cocoa powder
  • 1 large egg, at room temperature
  • 1 cup buttermilk, at room temperature
  • ½ cup vegetable oil
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 tsp white vinegar

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. Mix dry ingredients: In a medium-sized bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
  3. Combine wet ingredients: In a large bowl, beat together the egg, buttermilk, oil, food coloring, vanilla extract, and vinegar until well combined.
  4. Add dry to wet ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  5. Fill cupcake liners: Divide the batter evenly among the 12 cupcake liners, filling each about 2/3 full.
  6. Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
  7. Make the frosting: In a large bowl, beat the cream cheese and butter together until smooth and fluffy. Gradually add the powdered sugar, one cup at a time, and continue to beat until smooth. Add the vanilla extract and a pinch of salt, and beat until fully incorporated.
  8. Frost the cupcakes: Once the cupcakes are completely cooled, spread or pipe the cream cheese frosting onto each cupcake.
  9. Optional decoration: For a Valentine’s Day touch, sprinkle with red or pink heart-shaped sprinkles, or add a few fresh raspberries on top!
