“Eat Them to Beat Them” is a proactive culinary initiative at our Anse Chastanet Resort in St.Lucia, addressing the challenge of invasive Lionfish in the Caribbean while creating an enticing and educational gourmet dining experience. Each week guests are invited to a beachside tasting menu where Lionfish are featured in diverse and delicious preparations, demonstrating
the fish’s culinary flexibility.

Enhancing the initiative further, the resort’s consulting chef, Allen Susser, has authored “Green Fig and Lionfish,” a cookbook gifted to guests at the dinner. It offers recipes that encourage sustainable eating practices at home. Additionally, a video featuring Chef Susser preparing Lionfish ceviche has been produced, visually demonstrating how Lionfish can be transformed into a gourmet dish, accessible online.

Conservation in Action:
Scuba diving guests can take part in specialty courses designed to safely catch Lionfish, contributing directly to our conservation efforts and gaining an understanding of their ecological impacts.
